
This is my 2nd year canning salsa. It was a lot of fun, but a lot of work. We had a Jamie, Kristi, Jenny, Deb, Me, and Jason all helping. Yes, Jason! He got dragged into it. He actually stayed outside most the time and boiled our tomatoes for us on the camp chef. I think we would have been up all night if he wasn't there to help. (THANKS HONEY!) We ended up getting 69 quarts out of all the produce, and can I just say, it is SOOOO tasty! Pour it on top of a block of cream cheese and pig out with some tortilla chips. Scrumdiddly!


A few days after I picked a ton of jalepeno's out of my garden and I pickled and canned them. I used my Auntie's recipe and I won't know if they will turn out yummy or not for awhile, because you gotta give them time to pickle. I ended up getting 8 pints, and they are still growing, so i'll probably be doing some more later. I love canning. It's a lot of work, but worth it. I think next year i'll plant a bigger garden!

I am really impressed! The salsa looks delicious. I need to can tomoatoes, but I think I will have to wait a couple of weeks.
You'll have to let me know how the peppers turn out. I did pickles and they were delicious considering it was my first time. I love canning too. 4 years ago I'd have laughed when someone asked me if I can. If you need and extra camp chef, water bath canner, or pressure cooker, you are welcome to borrow mine as long as I'm not using it.
Now here is something that someday you will have to teach me! It all looks fabulous and I can't wait to try some!
